Preheat the oven to 180 ºC with heat up and down and prepare one or two large trays with parchment paper. Mix all dressing ingredients in a bowl. Lightly beat the egg in another with a tablespoon of water (or milk).

Roll out the puff pastry on the paper in which it is wrapped or another sheet of baking paper, flattening it slightly with a roller. Brush with the egg mixture and reserve what is left over. Divide into two halves with a cut or marking only one line in the middle, as if we were making a book.

Cover half abundantly with the seed mixture (although we will surely add a lot of we over) and cover with the other half of the dough. It is easier if we have not cut it and simply close it by wrapping it. Press gently with the roller.

If the dough has become very hot and is very delicate, put it in the fridge 15 minute. Dimension parallel strips a little less than a finger thick and twist them to form the twists , tightening the ends. Place on the baking trays, paint with the egg mixture that has leftover and bake for about 20 – 22 minutes, until golden brown.
