Quinoa kitchari a nourishing and protein-packed recipe! although the weather is getting hotter, i think a warming meal can never go wrong :))

quinoa kitchari (serves 3-4)
-1 tsp each: mustard seeds, cumin seeds
-2 bay leaves
-1 large onion, diced
-1 tbsp ginger, minced
-4 cloves garlic, minced
-3/4 tsp each: ground turmeric, fenugreek, ground coriander, black pepper, salt
-2 large carrots, diced
-1 cup dry quinoa
-1/2 cup split mung beans
-1/2 cup red lentils
-4 cups water / vegetable stock, plus more as needed
In a large pot, heat some oil and add the seeds and bay leaves. Stir for a minute, then add onion, ginger, garlic, spices, salt, and pepper. After 5 minutes, add in carrots and cook until slightly softened. Stir in quinoa, mung beans, lentils, and water. Bring to a boil, then cover and simmer on low heat for 30 minutes, or until the quinoa and carrots are tender. Add more water as needed — especially if you desire a thinner consistency. Stir well and serve warm.
